Solo Summer Salad Slaws

Salads make great summer fare for the person cooking for one. They are highly individualized and fit to small portion sizes. With summer bringing in bountiful varieties of vegetables, salads are an easy choice for a light meal. 

Salads provide munching satisfaction when they have crunchy texture and snappy flavor. Consider a type of salad that I think needs a comeback and fits both of those needs, slaw.

Slaws, shredded salads made of crispy, raw vegetables, are:

  • speedy with a small food processor, 
  • don't wilt under their dressings unlike their leafy counterparts, 
  • maintain their cool crunchiness for a couple of days, 
  • pack much easier for lunches than a typical leafy salad, and 
  • can handle optional stir-ins like pieces of cooked, cooled shrimp or chicken.

Now before you get nauseating images of cabbage particles drunk on liquified mayonnaise from pot-luck picnics gone bad, take a look at different versions of slaw.

Slaws, often seen as the ugly step-sister of the leafy salad, can get a glam make-over to become a modern beauty queen.

Here are a few modern takes on slaw that pack in a tangy-sweet flavor, bright colors, and tempting crunch without globs of mayonnaise or dreaded tangy salad dressing.
