French clafoutis: a fruit-filled brunch or lightly sweet dessert

Delicate and slightly sweet cherry clafoutis cooked for one personAn advantage of cooking for one person is the license to make things a little extra special on a small scale instead of making something for a whole family. Basic French cooking uses few, high-quality ingredients in such ingenious ways, such as employing seasonal fruit.

With deeply colored, fresh cherries on hand, a small clafoutis highlights the cherries in a delicious brunch or dessert. A French clafoutis (kla-FOO-tee) is classically made with cherries but can be made with other soft fruits such as berries, peaches, apricots, or plums that will complement its delicate texture. A clafoutis is a subtly sweet, baked cross between a custard and a souffle.   

Equipment needed:

  • small oven-proof baking dish or small cast iron skillet
  • measuring cups and spoons
  • medium bowl
  • large spoon
  • whisk

Ingredients needed:

  • butter to grease baking dish
  • 2 large eggs
  • 1/2 cup milk (preferrably low-fat or whole)
  • 1 1/2 tablespoons all-purpose flour
  • 2 tablespoons sugar
  • pinch of salt
  • drop or two of vanilla extract
  • 1/2 rounded cup of fruit (washed and cut)

How to do it:


1. Preheat oven to 350º F.

2.Grease the inside of the baking dish with butter.

3. Crack eggs into bowl and beat the eggs with the whisk until the yolks and whites are well-blended.

4. Add the milk, sugar, salt, and extract to the beaten eggs.

5. Add the flour to the mixture while beating it with the whisk to incorporate it well. Do not overbeat.

6. Spoon the batter into the prepared dish.

7. Place the fruit evenly throughout the clafoutis batter.

8. Bake in the oven for about 25-30 minutes until the clafoutis is puffed and lightly golden brown on the top.

9. Take it out of the oven and allow it to cool a bit. The clafoutis may deflate a bit (like an souffle). Once it is no longer very hot, run a table knife around the edge between the clafoutis and dish. Lift it out of the dish and eat warm.
